One orchard, one season, one fruit
Aatithya Farm began in Vadodara, Gujarat, where the Kesar mango has grown for generations and where the season is short enough that everyone plans around it. Every mango is picked by hand — a Kesar bruises if you are careless with it, and a bruised mango is a worse mango.

Farm-fresh fruit
Kesar mangoes picked ripe by hand in Vadodara, over several passes, taking only what is ready that day.
Frozen solid
Washed, peeled, sliced and frozen the same day, so the fruit never sits and never sours.
The moisture leaves
Under vacuum the ice turns straight to vapor without ever melting. No heat is used at any point.
Sealed & packed
The good stuff stays. Sealed with an oxygen absorber so the slices are still crisp when the pouch reaches you.
Freeze-dried, not dehydrated
Why the difference matters
Dehydrated mango — the usual sort on a shelf — has been heated for hours, which drives off flavor along with the water — so sugar goes back in to compensate. The result is chewy, sweet, and a long way from the fruit.
Freeze-drying takes a different route. Nothing is heated, so nothing needs replacing. What is left is the mango, minus its water: light, crisp, and startlingly close to the real thing.

First sold by hand. Now shipped to your door.
The first pouches went across a table at food festivals in Texas, where people could taste a slice before they bought anything. That was the fastest way to prove the point, because the first bite does most of the explaining.
