The season decides
In Gujarat, the mango is not a year-round item. The Kesar trees around Vadodara flower once, fruit once, and give you a window of a few weeks in early summer. Everything else in the year is preparation or waiting.
Aatithya Farm started inside that window. The problem was not growing good mangoes — the region has been doing that for generations. The problem was that the best fruit of the season lasted days, and then the season was over and there was nothing to show for it but memory.
Why hand-harvested
A Kesar mango does not forgive rough handling. Drop it, knock it against a crate, let it sit bruised in the sun for an afternoon, and you can taste the difference later. So the fruit is picked by hand, across several passes through the orchard, taking only what is ready that day and leaving the rest to ripen.
It is slower. It is also the only way we know to get fruit worth freeze-drying, because freeze-drying does not hide anything. Whatever the mango tasted like going in is what comes out the other side, concentrated. A mediocre mango makes a mediocre pouch.
Why freeze-drying, and not dehydration
Dehydration is warm air over many hours. It works, it is cheap, and it costs you the top notes of the fruit — which is why so much dried mango has sugar added back in. You are tasting the sugar as much as the mango.
Freeze-drying goes the other way. The slices are frozen solid, then held under vacuum so the ice leaves as vapor without ever passing through water. No heat, so nothing is cooked off and nothing needs replacing. The slice keeps its color, its shape and its flavor, and loses only what we wanted to remove.
Where it is dried and packed
Drying and packing happen in a clean facility operating under a documented food safety program. The pouch carries FSSAI license 10720024000108 and a “100% Made in India” mark.
We are deliberate about the wording, and it is worth saying why. The FDA does not approve foods or facilities. Any brand that tells you it is “FDA approved” is describing something that does not exist. Facilities can be registered with the FDA and can meet FDA food safety standards, and that is the most that can honestly be claimed.
Why there is only one product
There is one product, one size, one price. Partly that is discipline. Mostly it is arithmetic: a single harvest only stretches so far, and we would rather put all of it into one pouch that is right than spread it thin across a product line.
It also means that when a batch runs out, it runs out. We do not backfill with fruit from somewhere else to keep the shelf full. We wait for the trees, like everyone in Vadodara has always had to.
